Abstract
Chemical composition and hygienic quality of the samples of milk marketed at
the canteens of various hospitals located in the cily of Faisalabad, were determined
using the standard techniques. The following average values for the major milk
constituents were observed: water, 92.61%; fat, 2.02%; protein, 2.41%; lactose,
2.35%; ash, 0.61% and SNF, 5.37%. The tests carried out for cvaluating the hygienic
quality of the milk samplcs showed the following results: Titrable acidity, 0.106%,
microscopic count, 3,66,741 per ml and Coliform count, 59,825 per ml. The time for
the rcduction of methylene biuc dye in milk samples collected from canicens of
various hospitals was: less than half an hour, 8.75%; less than two hours 8.75%; less
than five hours, 18.75% and over cight hours, 63.75%. The results suguest thal milk
sold at these canicens is extensively pul to malpractices such as skimming and
adultcralion with water which are probably carricd out during the handling of milk
Starung from milking ull it reaches the consumers.
